Ingredients
4 Ears of Corn (or 2 cans of corn)
1 Tbsp. Olive Oil
½ tsps Salt
½ c. Mayonnaise (homemade is best)
¼ c. Cotija Cheese
2 Limes (juiced)
4 Tbsp. Cilantro (chopped)
1 tsps. Roasted Garlic Powder
1 Tbsp. Chili Powder
Directions
- Very carefully, using a sharp knife, cut the corn kernels off of the cob.
- Heat the olive oil in a large non-stick skillet. Once the oil is hot, add the corn and cook for about 10 minutes or until slightly charred.
- Remove corn from heat and place cooked corn into a serving bowl. Add the salt, mayonnaise, cotija cheese, lime juice, cilantro, roasted garlic powder & chili powder, and stir well, making sure all ingredients are equally distributed.
- At this point, you can serve your cotija corn (and it will be amazing!), but “more is more”. To garnish your cotija corn just top with extra cotija cheese & a dash of chopped cilantro.
