Korean BBQ Sloppy Joes with Avocado Sour Cream Sandwich Sauce

Ingredients:

Avocado Sour Cream Sandwich Sauce

1 Avocado (diced)

1 bunch of Cilantro (roughly chopped)

1 - 2 Garlic Cloves (minced)

¼ c. Olive Oil

¼ c. Mayonnaise

Juice of 2 Limes 

Korean BBQ Sauce 

½ c. Dark Brown Sugar

½ c. Soy Sauce

1 Tbsp. Gochujang (Chili Paste)

1 Tbsp. Rice Wine Vinegar

2 Tbsp. Sesame Oil

1 ½ tsp. Fresh Ginger (ground, or as paste)

5 - 6 Garlic Cloves (minced, or as paste)

¼ tsp. Black Pepper (freshly ground)

2 tsp. Cornstarch

1 tsp. Water

Additional Ingredients

2 lb. Ground Beef

4 - 6 Hawaiian Sweet Hamburger Buns (toasted)

1 Tbsp. Cornstarch 

2 Tbsp. Water

Directions:

Avocado Sour Cream Sandwich Sauce

  1. Place all of the ingredients into a blender and pulse until smooth. 
  2. Pour the sandwich sauce into an airtight container. Store in the refrigerator until ready to use. 

Korean BBQ Sauce

  1. In a saucepan, set on a medium-high heat, combine the dark brown sugar, soy sauce, gochujang, rice wine vinegar, sesame oil, ginger, garlic, and pepper. Stir until all of the ingredients are well combined. Bring to a simmer. 
  2. In a separate bowl, stir together the cornstarch and water. 
  3. Using a whisk, add in the cornstarch mixture and stir continuously. Once the mixture has thickened and reached the desired level of thickness, take it off of the heat. 
  4. Once cooled to room temperature, pour the korrean bbq sauce into an airtight container. Store it in the refrigerator until ready to use.

Korean BBQ Sloppy Joes with Avocado Sour Cream Sandwich Sauce

  1. In a large non-stick saucepan, placed on a medium-high heat, begin to cook the ground beef crumbles. Cook the beef crumbles completely. It will take about 10 minutes to do so.
  2. Now, add to the cooked beef crumbles all of the korean BBQ sauce. Stir until well combined, allowing some of the liquid to reduce (about 2 minutes).
  3. In a small bowl, mix together the 1 Tbsp. cornstarch and 2 Tbsp. water. Then, add the cornstarch mixture into the korean bbq sloppy joe mix. Allow the mixture to thicken, and then take it off of the heat.
  4. Serve the sloppy joe mix on toasted hawaiian sweet buns with a heaping spoonful of  avocado sour cream sandwich sauce. 
  5. Enjoy!
