Cotija Corn

Yield: 4 servings

Total Time: 30 minutes

Ingredients

4 Ears of Corn (or 2 cans of corn)

1 Tbsp. Olive Oil

½ tsps Salt

½ c. Mayonnaise (homemade is best)

¼ c. Cotija Cheese

2 Limes (juiced)

4 Tbsp. Cilantro (chopped)

1 tsps. Roasted Garlic Powder

1 Tbsp.  Chili Powder

Directions

  1. Very carefully, using a sharp knife, cut the corn kernels off of the cob. 
  2. Heat the olive oil in a large non-stick skillet. Once the oil is hot, add the corn and cook for about 10 minutes or until slightly charred. 
  3. Remove corn from heat and place cooked corn into a serving bowl. Add the salt, mayonnaise, cotija cheese, lime juice, cilantro, roasted garlic powder & chili powder, and stir well, making sure all ingredients are equally distributed. 
  4. At this point, you can serve your cotija corn (and it will be amazing!), but “more is more”. To garnish your cotija corn just top with extra cotija cheese & a dash of chopped cilantro. 
  5. Enjoy!
