50g Plain Flour
200g Cheeses of choice (grated)
1 Tsp. English Mustard
1 Tsp. Black Pepper
Crusty Bread to serve
- Melt the butter in a large saucepan on a medium heat, add the mustard, and allow to cook for about 30 seconds before incorporating the flour. Allow to fry for another 1- 2 minutes or until it starts to produce a honeycomb effect and browns slightly in colour.
- Start to slowly add the milk, whisking to fully incorporate and to prevent lumps, before adding more milk. Once all the milk has been added, pop in your cheese and continue to stir with a spatula to prevent burning.
- Stir in your black pepper, and serve!
