Ingredients:
Cheddar Bay Biscuits (Red Lobster Copycat)
2 c. All Purpose Flour
½ Tbsp. Granulated Sugar
1 Tbsp. Baking Powder
1 Tbsp. Roasted Garlic Powder
½ tsp. Black Pepper
½ tsp. Kosher Salt
1 c. Buttermilk
½ c. PLUS 2 Tbsp. Melted Butter (salted)
1 c. PLUS ¼ c. Sharp Cheddar Cheese (grated)
1 c. English White Cheddar Cheese (grated)
3 Tbsp. Garlic Powder
Baked Shrimp Scampi
2 lbs Large Shrimp (Peeled, and Deveined)
3 Tbsps. Lemon Juice
3 Tbsps. Pinot Grigio
1 Shallot (minced)
5 Large Garlic Cloves (thinly sliced)
4 oz. Melted Butter
¼ c. Panko breadcrumbs
¼ c. Parmigiano Reggiano (finely grated)
Zest and Juice of 1 Lemon
Salt & Pepper to Taste
Directions:
Cheddar Bay Biscuits (Red Lobster Copycat)
- Preheat the oven to 450F, and prepare a baking sheet with parchment paper.
- In a large bowl, whisk together all purpose flour, granulated sugar, baking powder, roasted garlic powder, black pepper and kosher salt until all ingredients are fully incorporated.
- Pour in buttermilk and melted butter. Using a soft spatula, mix until all of the ingredients have just combined. Mix in 1 cup grated sharp cheddar and 1 cup english white cheddar. Stop as soon as all of the ingredients are fully incorporated. Be careful to not over mix, or knead, the dough. Divide the dough into 6 equal portions and shape dough balls. Place the dough balls onto the prepared baking sheet.
- In a separate bowl, pour in garlic powder. Using the ¼ c. sharp cheddar cheese, gently pat the cheese onto the exterior of the dough balls and then gently roll the dough balls in the garlic powder. Place all of the cheesy garlic dough balls back onto the prepared baking sheet. Make sure they are about 2 inches apart.
- Bake for about 10 minutes, or until golden brown.
- Cover the baked rolls in the remaining melted butter.
- Serve & Enjoy!
Baked Shrimp Scampi
- Preheat the oven to 425F.
- In a large bowl, mix together the shrimp, lemon juice, pinot grigio, shallot, garlic clove slices, and 1 oz. of melted butter. Place the shrimp mixture into a large cast iron pan, or oven safe dish.
- In a small bowl, mix together 3 oz. melted butter & panko breadcrumbs. Skatter the buttered panko crumbs over the shrimp, and then top with finely grated parmigiano reggiano cheese.
- Bake for 10 minutes, or until just cooked. Then set the broiler to high and allow to cook for an additional 3 minutes, or until the top begins to brown.
- Cover in the zest of 1 lemon, and then squeeze the juice onto the baked shrimp. Salt & Pepper to taste.
- Serve and Enjoy!
